The countryside and the natural location of our space, in the heart of Tuscany, true and authentic, set in the beauty of Cortona, a city filled with Etruscan art. The bond with traditional cuisine is strong and indissoluble. It is precisely from this cuisine that we draw inspiration, creating a modern take on honored traditions, into the present technique.

Organika was born from the need to create a table where the raw ingredients that surround us are transformed, with rigorous technique and the goal of enhancing the palate.

The search for the ingredient is a central element in the construction of our creations. Last, but not least, we take these steps with a view to both ethical and ecological sustainability.
